Since you mention HEADS, I would say 6.0L for the only reason being that the larger bore lets you use better heads. Other than that, I would not be afraid of using the 5.3 - it has the same crank as the 6.0, increase the charge density (FI or nitrous) and it'll act similarly to the 6.0L. Mr. P.
