Just a short drive on I-10 lol... I'm jealous. There are no local butchers round here. Most of the grocery stores buy all their meats pre-cut. Very rare that I can find anything special. The rolling works real well to give the ribs a smaller footprint on the grate so you can keep them from being directly over the coals.
